Description
A rich and decadent Dark Chocolate Blackberry Cheesecake that combines the flavors of dark chocolate and fresh blackberries for a delightful dessert.
Ingredients
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 oz dark chocolate, melted and slightly cooled
- 1 cup fresh blackberries
- 1 cup sour cream
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar. Mix until well combined. Press the mixture evenly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.
- Add the vanilla extract and lemon juice to the cream cheese mixture, mixing until incorporated.
- Add the eggs one at a time, mixing on low speed after each addition until just combined.
- Pour in the melted dark chocolate and mix until fully incorporated.
- Gently fold in the blackberries and sour cream until evenly distributed.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, consider adding a splash of espresso or coffee to the chocolate mixture.
- You can also top the cheesecake with additional fresh blackberries or a drizzle of chocolate sauce before serving for an elegant presentation.
