Description
A rich and creamy dark chocolate raspberry cheesecake that combines the flavors of chocolate and fresh raspberries for a decadent dessert.
Ingredients
- 1 ½ cups chocolate graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 8 ounces dark chocolate, melted and slightly cooled
- 1 cup fresh raspberries
- ¼ cup sour cream
Instructions
- Preheat your oven to 325°F.
- In a medium bowl, combine the chocolate graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined. Mix in the vanilla extract.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Pour in the melted dark chocolate and mix until fully incorporated. Gently fold in the fresh raspberries and sour cream.
- Pour the cheesecake batter over the cooled crust in the springform pan. Bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.
- Before serving, garnish with additional fresh raspberries and a drizzle of melted dark chocolate if desired.
Notes
- For a richer flavor, try using a higher percentage dark chocolate (70% or more).
- You can substitute the raspberries with strawberries or blueberries for a different fruit twist.
