Ingredients

  • 12 ounces cheese tortellini
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 lemon, zested and juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, pour in the chicken broth and bring to a simmer. Stir in the heavy cream, lemon zest, lemon juice, oregano, salt, and pepper. Let it simmer for about 5 minutes until slightly thickened.
  5. Return the cooked shrimp to the skillet along with the tortellini. Gently toss to combine and heat through for an additional 2-3 minutes.
  6. Remove from heat and stir in the chopped parsley. Serve immediately, topped with grated Parmesan cheese.

  • For a lighter version, substitute half-and-half for heavy cream.
