Description
A delicious and creamy shrimp tortellini dish with a zesty lemon garlic sauce, perfect for a quick weeknight dinner.
Ingredients
- 12 ounces cheese tortellini
 - 1 pound large shrimp, peeled and deveined
 - 2 tablespoons olive oil
 - 4 cloves garlic, minced
 - 1 cup heavy cream
 - 1 cup chicken broth
 - 1 lemon, zested and juiced
 - 1 teaspoon dried oregano
 - Salt and pepper to taste
 - 1/4 cup fresh parsley, chopped
 - Grated Parmesan cheese for serving
 
Instructions
- Cook the cheese tortellini according to package instructions. Drain and set aside.
 - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
 - Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
 - In the same skillet, pour in the chicken broth and bring to a simmer. Stir in the heavy cream, lemon zest, lemon juice, oregano, salt, and pepper. Let it simmer for about 5 minutes until slightly thickened.
 - Return the cooked shrimp to the skillet along with the tortellini. Gently toss to combine and heat through for an additional 2-3 minutes.
 - Remove from heat and stir in the chopped parsley. Serve immediately, topped with grated Parmesan cheese.
 
Notes
- For a lighter version, substitute half-and-half for heavy cream.
 - Add a handful of spinach or cherry tomatoes for extra color and nutrition.
