Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8-ounce) container whipped topping, thawed
  • 1 (3-ounce) package flavored Jello (strawberry, lime, blue raspberry, etc.)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup fresh fruit (strawberries, blueberries, kiwi), for garnish

Instructions

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until fully combined. Press the mixture into the bottom of a 9-inch pie dish to form an even crust. Place in the refrigerator to chill while preparing the filling.
  2. In a separate bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth. Fold in the whipped topping until light and creamy. Spread this mixture over the chilled crust and return to the fridge.
  3. In another bowl, dissolve the flavored Jello powder in boiling water, stirring until completely dissolved. Stir in the cold water and let the mixture cool slightly (but not set).
  4. Carefully pour the cooled Jello mixture over the cream cheese layer. Refrigerate for at least 4 hours, or until the Jello is fully set.
  5. Before serving, top the pie with fresh fruit of your choice. Slice and enjoy chilled.
