Description
A delightful and easy-to-make chicken fajita casserole that combines shredded chicken, black beans, corn, and cheese, layered with tortillas and baked to perfection.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, sliced (any color)
- 1 small onion, sliced
- 1 packet (1 oz) fajita seasoning mix
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 6 small flour tortillas, cut into strips
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, cooking until softened, about 5 minutes. Season with salt and pepper.
- In a large bowl, combine the shredded chicken, black beans, corn, fajita seasoning, and salsa. Stir in the sautéed onions and peppers until well mixed.
- Layer half of the tortilla strips on the bottom of the prepared baking dish. Spread half of the chicken mixture over the tortillas, then sprinkle with 1 cup of cheddar cheese.
- Repeat the layers with the remaining tortilla strips, chicken mixture, and top with the remaining cheese.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for 5 minutes before serving. Garnish with fresh cilantro if desired.
Notes
- For a spicier kick, add diced jalapeños to the chicken mixture or use a spicy salsa.
- Substitute ground turkey or beef for the chicken for a different flavor profile.
