Description

A delightful and easy-to-make chicken fajita casserole that combines shredded chicken, black beans, corn, and cheese, layered with tortillas and baked to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, sliced (any color)
  • 1 small onion, sliced
  • 1 packet (1 oz) fajita seasoning mix
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 6 small flour tortillas, cut into strips
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper, cooking until softened, about 5 minutes. Season with salt and pepper.
  3. In a large bowl, combine the shredded chicken, black beans, corn, fajita seasoning, and salsa. Stir in the sautéed onions and peppers until well mixed.
  4. Layer half of the tortilla strips on the bottom of the prepared baking dish. Spread half of the chicken mixture over the tortillas, then sprinkle with 1 cup of cheddar cheese.
  5. Repeat the layers with the remaining tortilla strips, chicken mixture, and top with the remaining cheese.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Let the casserole cool for 5 minutes before serving. Garnish with fresh cilantro if desired.

  • For a spicier kick, add diced jalapeños to the chicken mixture or use a spicy salsa.
