Ingredients

  • 2 lbs starchy potatoes (Russets or Yukon Golds)
  • 2 large sweet onions (Vidalia or Walla Walla)
  • 1 cup heavy cream
  • 1 ½ cups shredded Gruyère cheese
  • Fresh thyme (to taste)
  • Salt and pepper (to taste)
  • 2 tablespoons butter

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) for even cooking and a bubbly top.
  • Caramelize the Onions:
    • Melt butter in a skillet over medium heat.
    • Add sliced onions and sauté for 15–20 minutes, stirring occasionally, until golden and soft.
  • Prepare the Potatoes:
    • Peel and slice potatoes into ⅛-inch thick rounds.
    • Toss slices in a large bowl with cream, thyme, salt, and pepper until well coated.
  • Assemble the Dish:
    • Grease a baking dish with butter or cooking spray.
    • Layer half the potato slices evenly in the dish.
    • Add half the caramelized onions, then repeat with the remaining potatoes and onions.
    • Sprinkle Gruyère cheese generously on top.
  • Bake:
    • Cover the dish with foil and bake for 45 minutes.
    • Remove the foil and bake an additional 15–20 minutes, or until the top is golden and bubbly.

Notes

  • Potato Choice: Use Russets for creaminess or Yukon Golds for a buttery flavor.
  • Cheese Options: Gruyère is ideal, but Swiss or a mix of mozzarella and Parmesan works too.
