Ingredients
- 2 lbs starchy potatoes (Russets or Yukon Golds)

- 1 cup heavy cream
- 1 ½ cups shredded Gruyère cheese
- Fresh thyme (to taste)
- Salt and pepper (to taste)
- 2 tablespoons butter
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) for even cooking and a bubbly top.
- Caramelize the Onions:
- Melt butter in a skillet over medium heat.
- Add sliced onions and sauté for 15–20 minutes, stirring occasionally, until golden and soft.
- Prepare the Potatoes:
- Peel and slice potatoes into ⅛-inch thick rounds.
- Toss slices in a large bowl with cream, thyme, salt, and pepper until well coated.
- Assemble the Dish:
- Grease a baking dish with butter or cooking spray.
- Layer half the potato slices evenly in the dish.
- Add half the caramelized onions, then repeat with the remaining potatoes and onions.
- Sprinkle Gruyère cheese generously on top.
- Bake:
- Cover the dish with foil and bake for 45 minutes.
