Ingredients

For the Burrito Seasoning:

  • Onion powder – 1 tsp
  • Dried oregano – 1 tsp
  • Salt – 1 tsp
  • Cumin powder – 2 tsp
  • Paprika – 2 tsp
  • Black pepper – ¼ tsp
  • Cayenne pepper (optional) – ¼ tsp

For the Beef Filling:

  • Olive oil – ½ tbsp
  • Garlic cloves, minced – 2
  • Onion, finely chopped – ½
  • Lean ground beef – 500g (1 lb)
  • Tomato paste – 2 tbsp
  • Water – 3 tbsp

For Assembly:

  • Flour tortillas – 6–8 large (25cm/10″+)
  • Cooked white rice – 3 cups
  • Iceberg lettuce or cabbage, shredded – 3 cups
  • Corn kernels – 1 cup
  • Black beans – 1 cup
  • Tomatoes, deseeded and diced – 3
  • Red onion, finely chopped – ½
  • Fresh cilantro, chopped (optional) – To taste
  • Shredded cheese – 1 ½ cups

Instructions

  • Prepare the Burrito Seasoning
    • Combine all seasoning ingredients in a small bowl and mix well. Set aside.
  • Cook the Beef Filling
    • Heat olive oil in a large skillet over medium heat.
    • Add minced garlic and chopped onion, sautéing until fragrant and lightly browned.
    • Add ground beef, breaking it up with a spoon as it cooks. Cook until browned.
    • Stir in the seasoning, tomato paste, and water. Mix well and cook for another 2–3 minutes. Remove from heat and let cool slightly.
  • Warm the Tortillas (Optional)
    • Warm the tortillas in a dry skillet or microwave to make them more pliable.
  • Assemble the Burritos
    • Lay a tortilla flat on a clean surface.
    • Layer the following ingredients just below the center of the tortilla:
      • Rice
      • Beef filling
      • Lettuce or cabbage
      • Corn kernels
      • Black beans
      • Tomatoes
      • Red onion
      • Cilantro (optional)
      • Shredded cheese
    • Fold the bottom of the tortilla up over the filling, then fold in the sides, and roll tightly.
  • Heat the Burritos (Optional)
    • Wrap each burrito in aluminum foil.
    • Heat in a skillet for 2–3 minutes per side until crispy, or bake at 350°F (180°C) for 20 minutes.

  • Avoid Overfilling: Too much filling makes burritos difficult to roll.
