Description

Imagine the warm cinnamon flavor of snickerdoodle cookies transformed into a moist, decadent Bundt cake. This Easy Snickerdoodle Bundt Cake is the perfect dessert for any occasion, combining the comfort of cinnamon with a rich cream cheese glaze and a delightful cinnamon sugar topping.

Ingredients

For the Cake:

  • 1 box vanilla cake mix
  • 3 large eggs
  • 1/3 cup vegetable oil (or melted butter)
  • 1 cup buttermilk (or milk with 1 tsp lemon juice/vinegar)
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar (dark or light)
  • 2 tbsp all-purpose flour
  • 2 tsp ground cinnamon
  • 2 tbsp melted unsalted butter
  • 1/4 cup sanding sugar (or granulated)

For the Glaze:

  • 4 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • Milk (optional, to thin)

Instructions

  • Prep Your Tools and Oven
Preheat the oven to 350°F (175°C). Grease a 10–12-cup Bundt pan generously with nonstick spray or butter.
  • Create the Cake Batter
In a large mixing bowl, combine the vanilla cake mix, eggs, oil or melted butter, buttermilk, and vanilla extract. Beat with a hand or stand mixer on medium speed until smooth and lump-free.
  • Make the Cinnamon Swirl
In a small bowl, mix the brown sugar, flour, cinnamon, and melted butter to create the cinnamon swirl.
  • Layer the Batter and Swirl
Pour half of the cake batter into the prepared Bundt pan. Spoon half of the cinnamon swirl mixture on top and swirl with a toothpick. Repeat with the remaining batter and cinnamon mixture.
  • Bake to Perfection
Bake for 40-45 minutes, or until a toothpick comes out with moist crumbs. Let the cake cool for 15 minutes before inverting it onto a plate.
  • Make the Glaze
Beat together the softened cream cheese, butter, and vanilla extract. Gradually add powdered sugar and mix until smooth. Thin with milk if needed.
  • Finish the Cake
Drizzle the glaze over the cooled cake and sprinkle the cinnamon sugar mixture on top for added sweetness and sparkle.

Notes

  • Grease the Bundt pan thoroughly for easy cake removal.
  • Overmixing the batter can lead to a dense texture, so mix just until combined.
  • For the best results, use room-temperature ingredients.
