Ingredients
For the Cake:
- 1 box vanilla cake mix
- 3 large eggs
- 1/3 cup vegetable oil (or melted butter)
- 1 cup buttermilk (or milk with 1 tsp lemon juice/vinegar)
- 1 tsp vanilla extract
- 1/2 cup brown sugar (dark or light)
- 2 tbsp all-purpose flour
- 2 tsp ground cinnamon
- 2 tbsp melted unsalted butter
- 1/4 cup sanding sugar (or granulated)
For the Glaze:
- 4 oz cream cheese (softened)
- 1/4 cup unsalted butter (softened)
- 1 tsp vanilla extract
- 1 cup powdered sugar
- Milk (optional, to thin)
Instructions
- Prep Your Tools and Oven
Preheat the oven to 350°F (175°C). Grease a 10–12-cup Bundt pan generously with nonstick spray or butter. - Create the Cake Batter
In a large mixing bowl, combine the vanilla cake mix, eggs, oil or melted butter, buttermilk, and vanilla extract. Beat with a hand or stand mixer on medium speed until smooth and lump-free. - Make the Cinnamon Swirl
In a small bowl, mix the brown sugar, flour, cinnamon, and melted butter to create the cinnamon swirl. - Layer the Batter and Swirl
Pour half of the cake batter into the prepared Bundt pan. Spoon half of the cinnamon swirl mixture on top and swirl with a toothpick. Repeat with the remaining batter and cinnamon mixture. - Bake to Perfection
Bake for 40-45 minutes, or until a toothpick comes out with moist crumbs. Let the cake cool for 15 minutes before inverting it onto a plate. - Make the Glaze
Beat together the softened cream cheese, butter, and vanilla extract. Gradually add powdered sugar and mix until smooth. Thin with milk if needed. - Finish the Cake
Drizzle the glaze over the cooled cake and sprinkle the cinnamon sugar mixture on top for added sweetness and sparkle.
Notes
- Grease the Bundt pan thoroughly for easy cake removal.
- Overmixing the batter can lead to a dense texture, so mix just until combined.
- For the best results, use room-temperature ingredients.
