Ingredients
- 12 large eggs
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1/2 tsp ground coriander
- 6 oz Monterey Jack/Cheddar blend (shredded)
- 16 oz cottage cheese (small curd, low-fat)
- 1/4 cup melted butter
- 2 (4 oz) cans diced green chilies
- 1 cup whole kernel corn (canned or frozen)
- 1 (15 oz) can black beans, drained
- Optional toppings: avocado slices, salsa, hot sauce
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C). Grease a 13” x 9” glass baking dish.
- Beat the Eggs: In a large bowl, beat the eggs until light and fluffy.
- Combine Dry Ingredients: Mix in the flour, baking powder, salt, and coriander until smooth.
- Add Cheese and Dairy: Stir in shredded cheese, cottage cheese, and melted butter until well combined.
- Incorporate Southwest Flavors: Fold in green chilies, corn, and black beans. Mix well.
- Pour and Bake: Pour the mixture into the prepared dish and spread evenly. Bake for 55–60 minutes, or until the top is golden and a knife inserted in the center comes out clean.
