Ingredients

  • 6 oz Monterey Jack/Cheddar blend (shredded)
  • 16 oz cottage cheese (small curd, low-fat)
  • 1/4 cup melted butter
  • 2 (4 oz) cans diced green chilies
  • 1 cup whole kernel corn (canned or frozen)
  • 1 (15 oz) can black beans, drained
  • Optional toppings: avocado slices, salsa, hot sauce

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C). Grease a 13” x 9” glass baking dish.
  2. Beat the Eggs: In a large bowl, beat the eggs until light and fluffy.
