Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced

  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/2 cup sour cream (for serving)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
  3. Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  4. Add the black beans, corn, and salsa to the skillet. Mix well and let simmer for 5 minutes, allowing the flavors to meld.
  5. Preheat your oven to 350°F.
  6. Lay a flour tortilla flat on a clean surface. Spoon about 1/2 cup of the beef mixture onto the center of the tortilla. Sprinkle with 2 tablespoons of shredded cheddar cheese.
  7. Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to form a burrito. Place seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.
  8. Once all burritos are in the dish, sprinkle the remaining cheese on top. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
