Description
A delightful recipe for Enchilada Style Ground Beef Burritos, packed with flavor and perfect for any meal.
Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup sour cream (for serving)
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
- Add the black beans, corn, and salsa to the skillet. Mix well and let simmer for 5 minutes, allowing the flavors to meld.
- Preheat your oven to 350°F.
- Lay a flour tortilla flat on a clean surface. Spoon about 1/2 cup of the beef mixture onto the center of the tortilla. Sprinkle with 2 tablespoons of shredded cheddar cheese.
- Fold the sides of the tortilla over the filling, then roll it up from the bottom to the top to form a burrito. Place seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.
- Once all burritos are in the dish, sprinkle the remaining cheese on top. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with chopped cilantro.
Notes
- For a spicier kick, add diced jalapeños or a dash of hot sauce to the beef mixture.
- Substitute ground turkey or chicken for a leaner option, or use a plant-based meat alternative for a vegetarian version.
