Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 cup water
  • 1 bag (12 ounces) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños (fresh or pickled)
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 1 lime, cut into wedges

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in taco seasoning and water. Simmer for 5 minutes until the mixture thickens slightly.
  5. Preheat your oven to 350°F.
  6. On a large baking sheet, spread out the tortilla chips in an even layer.
  7. Evenly distribute the beef mixture over the chips, followed by black beans, diced tomatoes, jalapeños, and shredded cheddar cheese.
  8. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and top with sour cream, diced avocado, and chopped cilantro.
  10. Serve immediately with lime wedges on the side.
