Description

A delicious and satisfying breakfast sandwich made with everything bagels, eggs, cheese, bacon, and avocado.


Ingredients

  • 2 everything bagels
  • 4 large eggs
  • 4 slices of cheddar cheese
  • 4 slices of cooked bacon
  • 1 ripe avocado, sliced
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Fresh chives, chopped (optional)

Instructions

  1. Preheat a skillet over medium heat and add the butter. Once melted, crack the eggs into the skillet. Cook to your desired doneness, seasoning with salt and pepper. For sunny-side up, cook for about 2-3 minutes; for over-easy, flip and cook for an additional minute.
  2. While the eggs are cooking, slice the everything bagels in half and toast them until golden brown.
  3. Once the eggs are done, place a slice of cheddar cheese on top of each egg and cover the skillet for about 1 minute to melt the cheese.
  4. Assemble the sandwiches by placing a slice of bacon on the bottom half of each toasted bagel, followed by the cheesy egg, avocado slices, and any additional toppings like chopped chives.
  5. Top with the other half of the bagel and serve immediately.
