Description
A delicious and satisfying breakfast sandwich made with everything bagels, eggs, cheese, bacon, and avocado.
Ingredients
- 2 everything bagels
- 4 large eggs
- 4 slices of cheddar cheese
- 4 slices of cooked bacon
- 1 ripe avocado, sliced
- Salt and pepper to taste
- 1 tablespoon butter
- Fresh chives, chopped (optional)
Instructions
- Preheat a skillet over medium heat and add the butter. Once melted, crack the eggs into the skillet. Cook to your desired doneness, seasoning with salt and pepper. For sunny-side up, cook for about 2-3 minutes; for over-easy, flip and cook for an additional minute.
- While the eggs are cooking, slice the everything bagels in half and toast them until golden brown.
- Once the eggs are done, place a slice of cheddar cheese on top of each egg and cover the skillet for about 1 minute to melt the cheese.
- Assemble the sandwiches by placing a slice of bacon on the bottom half of each toasted bagel, followed by the cheesy egg, avocado slices, and any additional toppings like chopped chives.
- Top with the other half of the bagel and serve immediately.
Notes
- For a healthier option, substitute turkey bacon for regular bacon.
- Add fresh spinach or arugula for extra greens and flavor.
