Ingredients

  • 2 cups cooked chicken breast, finely chopped
  • 1 cup cucumber, finely diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the finely chopped chicken, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
