A refreshing and healthy Finely Chopped Greek-Inspired Chicken Salad, perfect for a light meal or side dish.
Ingredients
- 2 cups cooked chicken breast, finely chopped
- 1 cup cucumber, finely diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the finely chopped chicken, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, and parsley.
- In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the chicken and vegetable mixture. Gently toss everything together until evenly coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
Notes
- For added crunch, include 1/4 cup of chopped bell peppers or 1/4 cup of chopped celery.
- Substitute grilled shrimp or tofu for the chicken for a different protein option.
