Description
A delicious and creamy Florida Shrimp Pie that combines shrimp, corn, and cheese in a flaky crust.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 cup corn kernels (fresh or frozen)
- 1 cup heavy cream
- 2 large eggs
- 1 teaspoon Old Bay seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 pre-made pie crust (9-inch)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for an additional 2 minutes.
- Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Stir in the corn, heavy cream, eggs, Old Bay seasoning, salt, and black pepper. Mix well and remove from heat.
- Pour the shrimp mixture into the pre-made pie crust. Sprinkle the shredded cheddar cheese evenly on top.
- Bake in the preheated oven for 30-35 minutes, or until the pie is set and the top is golden brown.
- Let the pie cool for 10 minutes before slicing. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper to the shrimp mixture.
- For a lighter version, substitute half-and-half for the heavy cream and use a whole wheat pie crust.
