Instructions

Step 1: Soak the Pineapple

  1. Place the pineapple rings in a medium bowl.
  2. Pour pineapple juice over the rings, ensuring they’re fully covered.

  4. After soaking, drain and pat the rings dry with paper towels.

Step 2: Prepare the Coating

  1. Set up three shallow bowls for the coating process:
    • Bowl 1: All-purpose flour.
    • Bowl 2: Whisk together eggs and coconut milk.
    • Bowl 3: Sweetened coconut.
  2. Arrange the bowls in order for easy assembly.

Step 3: Coat the Pineapple Rings

  1. Working one ring at a time, dredge a pineapple ring in the flour, shaking off any excess.
  2. Dip the floured ring into the egg mixture, ensuring it’s fully coated.
  3. Press the ring into the coconut, covering it evenly. Repeat with all pineapple rings.
