Instructions
Step 1: Soak the Pineapple
- Place the pineapple rings in a medium bowl.
- Pour pineapple juice over the rings, ensuring they’re fully covered.

- After soaking, drain and pat the rings dry with paper towels.
Step 2: Prepare the Coating
- Set up three shallow bowls for the coating process:
- Bowl 1: All-purpose flour.
- Bowl 2: Whisk together eggs and coconut milk.
- Bowl 3: Sweetened coconut.
- Arrange the bowls in order for easy assembly.
Step 3: Coat the Pineapple Rings
- Working one ring at a time, dredge a pineapple ring in the flour, shaking off any excess.
- Dip the floured ring into the egg mixture, ensuring it’s fully coated.
- Press the ring into the coconut, covering it evenly. Repeat with all pineapple rings.
