Ingredients

  • 4 salmon fillets (6 ounces each)
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon, sliced
  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, oregano, thyme, salt, and black pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper. Brush the garlic herb mixture over the top of each fillet. Place lemon slices on top of the salmon.
  4. In a large bowl, toss the broccoli, baby carrots, and bell peppers with the remaining 2 tablespoons of olive oil, salt, and pepper until evenly coated.
  5. Arrange the vegetables around the salmon on the baking sheet.
  6. Roast in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
  7. Remove from the oven and let it rest for a few minutes before serving.
