Description

This Garlic Parmesan Chicken Meatloaf is a flavorful, juicy twist on the classic comfort food. Made with lean ground chicken, garlic, Parmesan cheese, and herbs, these mini meatloaves are baked to golden perfection. Perfect for a quick weeknight dinner, meal prep, or even entertaining guests, this dish delivers big taste with minimal effort. Serve with mashed potatoes, roasted veggies, or a fresh salad for a complete, satisfying meal!

Ingredients

For the Meatloaf:

  • 1 lb ground chicken
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (or almond flour for gluten-free)
  • ¼ cup fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1 egg, beaten
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup milk (for moisture)
  • 2 tablespoons olive oil (for drizzling)
  • ¼ cup shredded mozzarella (optional, for topping)

Instructions

1. Preheat the Oven
Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. Mix the Ingredients
In a large mixing bowl, combine ground chicken, Parmesan, breadcrumbs, parsley, garlic, egg, oregano, salt, and black pepper. Stir in milk to keep the meatloaf moist. Mix gently—overmixing can make the meatloaf dense.

3. Shape the Meatloaves
Divide the mixture into 4 equal portions, shaping them into mini loaves. Place them on the prepared baking sheet, ensuring they have space between them.

4. Bake to Perfection
Drizzle olive oil over each meatloaf for a crispy crust. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).

5. Add the Cheese (Optional)
In the last 5 minutes, sprinkle shredded mozzarella on top of each loaf. Return to the oven and bake until melted and golden.

6. Let Rest & Serve
Allow the meatloaves to rest for 5 minutes before serving. This keeps them juicy! Pair with mashed potatoes, green beans, or a crisp salad for a complete meal.

Notes

  • For Extra Moisture: Do not skip the milk—it helps prevent dryness.
  • Make It Spicy: Add red pepper flakes or cayenne for heat.
  • Low-Carb Version: Replace breadcrumbs with almond flour and serve with cauliflower mash.
  • Meal Prep Friendly: Store in an airtight container for up to 3 days or freeze for up to 2 months.
