Ingredients
- 2 cups cooked chicken, shredded
 - 1 cup corn kernels (fresh, frozen, or canned)
 - 1 tablespoon olive oil
 - 1 teaspoon chili powder
 - 1 teaspoon garlic powder
 - 1 teaspoon cumin
 - Salt and pepper, to taste
 - 8 small corn tortillas
 - 1 cup crumbled queso fresco
 - 1 avocado, diced
 - 1/2 cup fresh cilantro, chopped
 - 1 lime, cut into wedges
 - 1/4 cup mayonnaise
 - 1 tablespoon lime juice
 - 1 teaspoon smoked paprika
 
Instructions
- In a skillet over medium heat, add olive oil and corn kernels. Sauté for about 5 minutes until the corn is slightly charred.
 - Stir in the shredded chicken, chili powder, garlic powder, cumin, salt, and pepper. Cook for another 3-4 minutes until heated through.
 - In a small bowl, mix together the mayonnaise, lime juice, and smoked paprika. Set aside.
 - Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
 - Assemble the tacos by placing a generous scoop of the chicken and corn mixture on each tortilla.
 - Top with crumbled queso fresco, diced avocado, and chopped cilantro. Drizzle with the lime mayo.
 - Serve immediately with lime wedges on the side.

- For a spicy kick, add diced jalapeños or a dash of hot sauce to the chicken mixture.
