Ingredients

For the Chicken Marinade:

  • 2 boneless, skinless chicken thighs, cut into chunks
  • 1 teaspoon garlic, minced
  • ½ tablespoon dried mixed herbs (oregano, thyme, basil)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ lemon, juiced
  • 1 tablespoon olive oil

For the Crispy Fries:

  • 2 large potatoes, cut into thick wedges
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Tzatziki Sauce:

  • 2 tablespoons Greek yogurt
  • ½ cucumber, grated and squeezed to remove excess water
  • 2 teaspoons garlic, minced
  • ½ lemon, juiced
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Gyros:

  • 2 large flatbreads (or 4 smaller pitas)
  • 1 tomato, sliced into wedges
  • ½ red onion, thinly sliced
  • Fresh parsley, roughly chopped
  • Extra tzatziki, for drizzling

Instructions

Step 1: Marinate the Chicken

  1. In a mixing bowl, combine chicken, garlic, mixed herbs, salt, pepper, lemon juice, and olive oil.
  2. Mix well, ensuring the chicken is fully coated. Let it marinate for at least 20 minutes (or up to 24 hours for deeper flavor).

Step 2: Prepare the Fries

  1. Toss potato wedges with olive oil, salt, and black pepper.
  2. Set aside while you preheat the cooking method.

Step 3: Cook the Chicken & Fries

Air Fryer Method:
5. Preheat air fryer to 200°C (390°F).
6. Place fries in one section and the marinated chicken in another.
7. Cook for 16 minutes, flipping halfway through.

Stovetop Method:
8. Heat 1 tablespoon of oil in a skillet over medium-high heat.
9. Cook chicken for 4-5 minutes per side until golden and fully cooked.
10. In a separate pan or oven, bake or fry potato wedges until crispy.

Step 4: Make the Tzatziki Sauce

  1. In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, salt, and black pepper.
  2. Stir well and refrigerate until ready to use.

Step 5: Assemble the Gyros

  1. Lightly toast the flatbread for a warm, soft texture.
  2. Spread tzatziki sauce generously over the flatbread.
  3. Add cooked chicken, crispy fries, sliced tomato, red onion, and parsley.
  4. Drizzle with extra tzatziki and roll the gyro tightly.
  5. Wrap in baking paper or foil to hold its shape.
