  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the rice to the saucepan and stir to coat the grains with the oil, cooking for about 2 minutes.
  4. Pour in the chicken broth, then add the oregano, salt, and black pepper. Bring the mixture to a boil.
