Ingredients
- 2 cups long-grain white rice
- 4 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 medium onion, finely chopped
- 3 tablespoons olive oil
- 1 teaspoon garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the rice to the saucepan and stir to coat the grains with the oil, cooking for about 2 minutes.
- Pour in the chicken broth, then add the oregano, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in the lemon juice and lemon zest.
- Serve warm, garnished with fresh parsley.
