Ingredients
- 680g cod fillets
- 5 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 5 tablespoons lemon juice
- 2 tablespoons butter, melted
- 1/3 cup plain flour
- 1 teaspoon coriander powder
- 5 tablespoons extra virgin olive oil
- 3/4 teaspoon sweet paprika
- 3/4 teaspoon cumin
- 3/4 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
- Preheat & Prepare:
- Preheat oven to 205°C (400°F).
- In a bowl, mix lemon juice, olive oil, and melted butter.
- In another bowl, combine flour, paprika, cumin, salt, and black pepper.
- Coat the Cod:
- Pat cod fillets dry with paper towels.
- Dip each fillet into the lemon juice mixture, then dredge in the flour mixture.
- Sear the Cod:
- Heat olive oil in a cast-iron skillet over medium-high heat.
- Sear fillets for 2 minutes on each side until lightly golden.
- Bake to Perfection:
- Add minced garlic to the remaining lemon juice mixture and drizzle over the cod.
- Transfer the skillet to the oven and bake for 10 minutes, until the fish flakes easily with a fork.
- Serve & Enjoy:
- Remove from the oven, let the cod rest for a few minutes.
- Garnish with fresh parsley and serve with Greek salad, roasted potatoes, or warm pita bread.
