Ingredients

  • 680g cod fillets
  • 5 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 5 tablespoons lemon juice
  • 2 tablespoons butter, melted
  • 1/3 cup plain flour
  • 1 teaspoon coriander powder
  • 5 tablespoons extra virgin olive oil
  • 3/4 teaspoon sweet paprika
  • 3/4 teaspoon cumin
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat & Prepare:
    • Preheat oven to 205°C (400°F).
    • In a bowl, mix lemon juice, olive oil, and melted butter.
    • In another bowl, combine flour, paprika, cumin, salt, and black pepper.
  2. Coat the Cod:
    • Pat cod fillets dry with paper towels.
    • Dip each fillet into the lemon juice mixture, then dredge in the flour mixture.
  3. Sear the Cod:
    • Heat olive oil in a cast-iron skillet over medium-high heat.
    • Sear fillets for 2 minutes on each side until lightly golden.
  4. Bake to Perfection:
    • Add minced garlic to the remaining lemon juice mixture and drizzle over the cod.
    • Transfer the skillet to the oven and bake for 10 minutes, until the fish flakes easily with a fork.
  5. Serve & Enjoy:
    • Remove from the oven, let the cod rest for a few minutes.
    • Garnish with fresh parsley and serve with Greek salad, roasted potatoes, or warm pita bread.
