A delicious and healthy Grilled Chicken & Avocado Salad Bowl that combines fresh ingredients with grilled chicken for a satisfying meal.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups mixed salad greens (such as romaine, spinach, and arugula)
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
- Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
- In a large bowl, combine the mixed salad greens, diced avocado, cherry tomatoes, cucumber, red onion, and feta cheese.
- Slice the grilled chicken and arrange it on top of the salad mixture.
- Drizzle the balsamic vinaigrette over the salad and toss gently to combine. Serve immediately.
Notes
- For added flavor, marinate the chicken in the olive oil mixture for at least 30 minutes before grilling.
- You can substitute the grilled chicken with grilled shrimp or tofu for a different protein option.
