Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups mixed salad greens (such as romaine, spinach, and arugula)
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat the grill to medium-high heat. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the chicken breasts.
  2. Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
  3. In a large bowl, combine the mixed salad greens, diced avocado, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. Slice the grilled chicken and arrange it on top of the salad mixture.
