Description

A delightful meal featuring grilled cod fillets topped with roasted tomatoes and a creamy dill sauce.


Ingredients

  • 4 (6-ounce) cod fillets
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat the grill to medium-high heat. If using a grill pan, preheat it on the stovetop.
  2. In a bowl, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven at 400°F for 15-20 minutes, or until they are soft and slightly caramelized.
  3. While the tomatoes are roasting, prepare the cod. Brush both sides of the cod fillets with the remaining tablespoon of olive oil and season with salt, pepper, garlic powder, and onion powder.
  4. Place the seasoned cod fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.
  5. In a small bowl, combine the sour cream, dill, lemon juice, and Dijon mustard. Mix well until smooth.
  6. Once the cod is cooked and the tomatoes are roasted, serve the cod fillets topped with the roasted tomatoes and a generous drizzle of the creamy dill sauce.

Notes

  • For added flavor, marinate the cod fillets in lemon juice, olive oil, and herbs for 30 minutes before grilling.
