A delicious and easy recipe for grilled teriyaki chicken, perfect for summer barbecues.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/4 cup rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a medium bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, sesame oil, and black pepper until well combined.
- Reserve 1/2 cup of the marinade in a separate bowl for later use as a glaze.
- Place the chicken thighs in a large resealable plastic bag or a shallow dish and pour the remaining marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade used for marinating.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
- While the chicken is grilling, heat the reserved marinade in a small saucepan over medium heat. In a small bowl, mix cornstarch and water until smooth, then stir into the marinade. Cook until thickened, about 2-3 minutes.
- Brush the thickened glaze over the chicken during the last few minutes of grilling.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the chicken garnished with sliced green onions and sesame seeds.
Notes
- For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
- Serve the grilled chicken over steamed rice or with grilled vegetables for a complete meal.
