Description

A delicious and easy recipe for grilled teriyaki chicken, perfect for summer barbecues.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, sesame oil, and black pepper until well combined.
  2. Reserve 1/2 cup of the marinade in a separate bowl for later use as a glaze.
  3. Place the chicken thighs in a large resealable plastic bag or a shallow dish and pour the remaining marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
  4. Preheat your grill to medium-high heat.
  5. Remove the chicken from the marinade and discard the marinade used for marinating.
  6. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  7. While the chicken is grilling, heat the reserved marinade in a small saucepan over medium heat. In a small bowl, mix cornstarch and water until smooth, then stir into the marinade. Cook until thickened, about 2-3 minutes.
  8. Brush the thickened glaze over the chicken during the last few minutes of grilling.
  9. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  10. Serve the chicken garnished with sliced green onions and sesame seeds.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
  • Serve the grilled chicken over steamed rice or with grilled vegetables for a complete meal.
