Ingredients
- 2 cups cooked chicken, shredded
- 1/4 cup Thai peanut sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- 1 head of butter or romaine lettuce, leaves separated
- 1/2 cup shredded carrots
- 1/2 cup cucumber, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts (for garnish)
Instructions
- In a large bowl, combine the shredded chicken, Thai peanut sauce, soy sauce, lime juice, honey, garlic powder, ground ginger, and red pepper flakes. Mix well until the chicken is evenly coated.
- Preheat a grill or grill pan over medium heat. Add the chicken mixture and grill for about 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.
- While the chicken is grilling, prepare the lettuce leaves by rinsing them under cold water and patting them dry.
- Once the chicken is ready, remove it from the grill and let it cool slightly.
- To assemble the wraps, take a lettuce leaf and fill it with a spoonful of the grilled chicken mixture, followed by shredded carrots, cucumber slices, and a sprinkle of chopped cilantro.
- Top each wrap with chopped peanuts for added crunch. Serve immediately.
