Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 stalks lemongrass, finely minced
  • 3 cloves garlic, finely chopped
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon crushed red pepper
  • 2 tablespoons oil for grilling
  • Fresh cilantro leaves, for garnish
  • Lime wedges, for serving

Instructions

  1. Prepare the marinade in a mixing bowl by combining the minced lemongrass, chopped garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime juice, and crushed red pepper. Stir until well blended.
  2. Add the shrimp to the marinade, ensuring each piece is thoroughly coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Heat the grill to medium-high temperature.
  4. Skewer the marinated shrimp, leaving small gaps between each shrimp.
  5. Grill the skewers for approximately 2-3 minutes per side, or until the shrimp are pink and opaque.
  6. Remove the shrimp from the grill and let them rest for a minute.
  7. Serve the grilled shrimp garnished with fresh cilantro and lime wedges.

Notes

  • For an extra kick, increase the amount of crushed red pepper or add sriracha to the marinade.
  • This recipe can be adapted by using chicken or tofu instead of shrimp.
