Description

A delicious grilled panini filled with fresh vegetables and creamy burrata cheese.


Ingredients

  • 2 ciabatta rolls
  • 1 medium zucchini, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 cup baby spinach
  • 8 ounces burrata cheese
  • 2 tablespoons olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon pesto (optional)

Instructions

  1. Preheat a grill pan or panini press over medium heat.
  2. In a bowl, toss the sliced zucchini, red bell pepper, and yellow bell pepper with olive oil, balsamic vinegar, garlic powder, Italian seasoning, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have grill marks. Remove from heat.
  4. Slice the ciabatta rolls in half and spread pesto on the inside of each half if using.
  5. Layer the grilled vegetables on the bottom half of each roll, followed by a generous portion of burrata cheese. Top with baby spinach and place the other half of the roll on top.
  6. Place the panini in the grill pan or panini press. Grill for about 3-5 minutes, or until the bread is golden brown and crispy, and the cheese is slightly melted.
  7. Remove from the heat, slice in half, and serve warm.

Notes

  • For a smoky flavor, add a pinch of smoked paprika to the vegetable mix.
  • Try substituting the burrata with fresh mozzarella or goat cheese for a different taste.
