Description
A delicious grilled panini filled with fresh vegetables and creamy burrata cheese.
Ingredients
- 2 ciabatta rolls
 - 1 medium zucchini, sliced
 - 1 medium red bell pepper, sliced
 - 1 medium yellow bell pepper, sliced
 - 1 cup baby spinach
 - 8 ounces burrata cheese
 - 2 tablespoons olive oil
 - 1 teaspoon balsamic vinegar
 - Salt and pepper to taste
 - 1 teaspoon garlic powder
 - 1 teaspoon Italian seasoning
 - 1 tablespoon pesto (optional)
 
Instructions
- Preheat a grill pan or panini press over medium heat.
 - In a bowl, toss the sliced zucchini, red bell pepper, and yellow bell pepper with olive oil, balsamic vinegar, garlic powder, Italian seasoning, salt, and pepper.
 - Grill the vegetables for about 5-7 minutes, turning occasionally, until they are tender and have grill marks. Remove from heat.
 - Slice the ciabatta rolls in half and spread pesto on the inside of each half if using.
 - Layer the grilled vegetables on the bottom half of each roll, followed by a generous portion of burrata cheese. Top with baby spinach and place the other half of the roll on top.
 - Place the panini in the grill pan or panini press. Grill for about 3-5 minutes, or until the bread is golden brown and crispy, and the cheese is slightly melted.
 - Remove from the heat, slice in half, and serve warm.
 
Notes
- For a smoky flavor, add a pinch of smoked paprika to the vegetable mix.
 - Try substituting the burrata with fresh mozzarella or goat cheese for a different taste.
