Perfect for busy weeknights or meal prepping, it’s ready in 30 minutes and completely customizable to your taste!

Ingredients

  • 1 lb ground turkey (85% lean preferred)
  • 1 tbsp sesame oil (or olive oil)
  • 1 small onion, diced
  • 2 cups broccoli florets (fresh or frozen)
  • 1/2 cup shredded carrots
  • 1 tsp orange zest (optional but recommended)
  • 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)
  • 2 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional for spice)

For the Teriyaki Sauce:

  • 3/4 cup water
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 1 tbsp honey (or maple syrup)
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch (or arrowroot powder)
  • 1/4 cup water (to mix with cornstarch)

Instructions

  • Prepare the Teriyaki Sauce:

    • In a small saucepan over medium heat, combine ¾ cup water, soy sauce, honey, brown sugar, garlic, and ginger. Stir and bring to a light boil.
    • In a separate bowl, whisk cornstarch with ¼ cup water to create a slurry.
    • Slowly pour the slurry into the saucepan, stirring continuously until the sauce thickens. Remove from heat and set aside.
  • Cook the Stir Fry:

    • Heat sesame oil in a large skillet or wok over medium-high heat.
    • Add diced onion and sauté for 2-3 minutes until softened.
    • Add ground turkey, breaking it apart as it cooks. Stir until fully browned.
  • Add Vegetables & Sauce:

    • Stir in broccoli and shredded carrots, cooking for 3-4 minutes until tender.
    • Reduce heat to low and pour in the prepared teriyaki sauce, stirring to coat all ingredients evenly. Let simmer for 2-3 minutes.
    • Sprinkle in orange zest (if using) and season with salt and pepper to taste.
  • Serve & Enjoy:

    • Serve over steamed rice, cauliflower rice, or noodles.
    • Garnish with sesame seeds, green onions, or crushed peanuts for extra flavor.

Notes

  • Customize It: Swap ground turkey for chicken, pork, or tofu for variety.
  • Make It Gluten-Free: Use tamari or coconut aminos instead of soy sauce.
  • Storage & Reheating: Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat in a skillet over medium heat or microwave in 30-second intervals.
