Description

Bring a taste of the tropics to your dinner table with this Hawaiian Chicken Sheet Pan! Juicy chicken, sweet pineapple, and colorful veggies come together in a flavorful soy-honey marinade, all roasted to perfection on a single pan. This easy, no-fuss meal is perfect for busy weeknights, meal prep, or a deliciously healthy twist on island-inspired flavors.

Ingredients

  • For the Chicken & Marinade:
    • 2 lbs chicken breast, diced
    • 2 tablespoons soy sauce (or tamari for gluten-free)
    • 2 tablespoons olive oil
    • 1 tablespoon honey
    • Juice of 1 lime
    • ½ teaspoon garlic powder
    • ½ teaspoon paprika
    • Salt and black pepper, to taste
  • For the Sheet Pan:
    • 2 cups fresh pineapple chunks
    • 1 bell pepper, chopped
    • 1 red onion, chopped
  • Optional Garnishes:
    • Chopped green onions
    • Sesame seeds
    • Extra lime wedges

Instructions

1. Prep the Ingredients
Preheat oven to 400°F (200°C). Dice the chicken, pineapple, and vegetables into bite-sized pieces.

2. Marinate the Chicken
In a large bowl, whisk together soy sauce, olive oil, honey, lime juice, garlic powder, paprika, salt, and black pepper. Toss in the diced chicken and let marinate for at least 10 minutes (or up to 2 hours for deeper flavor).

3. Assemble the Sheet Pan
Spread the marinated chicken, pineapple chunks, bell pepper, and onion evenly on a large sheet pan.

4. Roast to Perfection
Bake for 25-30 minutes, stirring halfway through, until the chicken is fully cooked and the vegetables are caramelized.

5. Serve & Enjoy
Garnish with chopped green onions, sesame seeds, or an extra squeeze of lime. Serve over rice, quinoa, or with a side of roasted vegetables.

Notes

  • For Extra Flavor: Marinate the chicken for up to 2 hours before baking.
  • Make It Spicy: Add red pepper flakes or Sriracha for a kick.
  • Low-Carb Option: Serve with cauliflower rice or leafy greens instead of grains.
  • Meal Prep Friendly: Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
