Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup pineapple juice
- 1 tablespoon rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a large bowl, whisk together the soy sauce, brown sugar, pineapple juice, rice vinegar, garlic, ginger, black pepper, and red pepper flakes until the sugar is dissolved.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
- Preheat your oven to 375°F.
- Remove the chicken from the marinade and place it in a baking dish. Pour the remaining marinade over the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F. Baste the chicken with the marinade halfway through cooking for extra flavor.
- Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.

- For a spicier kick, add more red pepper flakes or a dash of sriracha to the marinade.
