Ingredients
For the Cookie Dough:
- 2 ¼ cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Filling:
- ½ cup jam (strawberry, raspberry, apricot, or your favorite)
- Powdered sugar (optional, for dusting)
Instructions
- Prepare Your Workspace:
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper or silicone baking mats.
- Make the Dough:
- In a large bowl, cream the softened butter and sugar together until light and fluffy (2-3 minutes).
- Add the egg yolks, vanilla extract, and salt. Mix until fully combined.
- Gradually add the flour, ½ cup at a time, and mix until a soft dough forms.
- Chill the Dough:
- Divide the dough into two discs, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
- Roll and Cut the Cookies:
- Roll out one disc of chilled dough on a lightly floured surface to ¼-inch thickness.
- Use a heart-shaped cookie cutter to cut out the cookies. For half of them, use a smaller heart cutter to create a window in the center.
- Repeat with the second disc of dough.
- Bake the Cookies:
- Place the cookies 1 inch apart on prepared baking sheets.
- Bake for 8-10 minutes, until edges are lightly golden.
- Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
- Assemble the Cookies:
- Spread a thin layer of jam on the flat side of the full cookies (the “bottoms”).
- Place a windowed cookie (the “top”) over the jam and press gently to sandwich them together.
- Optional: Dust the tops with powdered sugar for a finishing touch.
Notes
- Chilling the Dough: Keeps the cookies from spreading during baking.
- High-Quality Jam: Enhances the flavor; simmer the jam to thicken if it’s too runny.
- Powdered Sugar: Add after assembling to avoid covering the jam.
