Instructions

  • Prepare Your Workspace:

    • Line two baking sheets with parchment paper or silicone baking mats.
  • Make the Dough:
    • In a large bowl, cream the softened butter and sugar together until light and fluffy (2-3 minutes).
    • Add the egg yolks, vanilla extract, and salt. Mix until fully combined.
    • Gradually add the flour, ½ cup at a time, and mix until a soft dough forms.
  • Chill the Dough:
    • Divide the dough into two discs, wrap each in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll and Cut the Cookies:
    • Roll out one disc of chilled dough on a lightly floured surface to ¼-inch thickness.
    • Use a heart-shaped cookie cutter to cut out the cookies. For half of them, use a smaller heart cutter to create a window in the center.
    • Repeat with the second disc of dough.
  • Bake the Cookies:
    • Place the cookies 1 inch apart on prepared baking sheets.
    • Bake for 8-10 minutes, until edges are lightly golden.
    • Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  • Assemble the Cookies:
    • Spread a thin layer of jam on the flat side of the full cookies (the “bottoms”).
    • Place a windowed cookie (the “top”) over the jam and press gently to sandwich them together.
    • Optional: Dust the tops with powdered sugar for a finishing touch.
