Ingredients
- 1 lb ground beef
- 1 lb smoked sausage, sliced

- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 2 medium potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes with juices
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or cilantro for garnish (optional)
Instructions
- Brown the Beef: Heat oil in a large pot over medium heat. Cook ground beef until browned, breaking it into crumbles. Drain excess fat.
- Add Smoked Sausage: Stir in the sliced smoked sausage and cook for 5 minutes.
- Sauté Aromatics: Add the diced onion and garlic. Cook until the onion is translucent, about 3–4 minutes.
- Combine Ingredients: Pour in beef broth, then add beans, corn, potatoes, and diced tomatoes with juices. Stir well.
- Season the Stew: Add chili powder, cumin, paprika, salt, and pepper. Stir to mix.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, or until potatoes are tender.
- Adjust and Serve: Taste and adjust seasoning if needed. Ladle into bowls, garnish with parsley or cilantro, and enjoy!
Notes
- For a smoky twist, use fire-roasted diced tomatoes.
- To thicken, mash some potatoes or beans into the stew.
