Description

A bold and flavorful one-pot wonder loaded with ground beef, smoked sausage, beans, and tender potatoes. Perfect for chilly nights or any occasion that calls for comfort food!


Ingredients

  • 1 lb ground beef
  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 2 medium potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley or cilantro for garnish (optional)

Instructions

 

  • Brown the Beef: Heat oil in a large pot over medium heat. Cook ground beef until browned, breaking it into crumbles. Drain excess fat.
  • Add Smoked Sausage: Stir in the sliced smoked sausage and cook for 5 minutes.
  • Sauté Aromatics: Add the diced onion and garlic. Cook until the onion is translucent, about 3–4 minutes.
  • Combine Ingredients: Pour in beef broth, then add beans, corn, potatoes, and diced tomatoes with juices. Stir well.
  • Season the Stew: Add chili powder, cumin, paprika, salt, and pepper. Stir to mix.
  • Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, or until potatoes are tender.
  • Adjust and Serve: Taste and adjust seasoning if needed. Ladle into bowls, garnish with parsley or cilantro, and enjoy!

Notes

  • For a smoky twist, use fire-roasted diced tomatoes.
  • To thicken, mash some potatoes or beans into the stew.
  • Add jalapeños for extra heat!
