Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup Greek yogurt
  • 1/4 cup shredded mozzarella cheese
  • 1/2 cup egg whites (about 4 large egg whites)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup cooked and crumbled turkey sausage or bacon (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 cup additional shredded mozzarella cheese for topping
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the whole wheat flour, baking powder, and salt. Stir until well mixed.
  3. Add the Greek yogurt to the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more flour.
  4. Transfer the dough to the prepared baking sheet and press it out into a round or rectangular shape, about 1/2 inch thick.
  5. In another bowl, whisk together the egg whites, bell peppers, onions, turkey sausage or bacon (if using), black pepper, garlic powder, and paprika.
  6. Pour the egg mixture evenly over the dough, spreading it out to cover the surface.
  7. Sprinkle the additional shredded mozzarella cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the egg is set and the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or basil if desired, then slice and serve.
