Description

A hearty, cheesy, and comforting one-pan meal made with seasoned ground beef, tender potatoes, and gooey melted cheese. This budget-friendly dish is perfect for busy weeknights or cozy family dinners.

Ingredients

For the Savory Beef & Potato Layers:

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced

For the Creamy, Cheesy Finish:

  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup beef broth or water
  • ¼ cup milk (optional, for extra creaminess)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Beef Layer:
    • Preheat oven to 375°F and grease a 9×13-inch baking dish.
    • In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until fragrant.
    • Add ground beef, breaking it up as it cooks, and season with salt, pepper, Italian seasoning, and paprika. Cook until browned, then drain excess fat.
    • Spread the cooked beef mixture evenly in the bottom of the prepared baking dish.
  2. Layer the Potatoes and Cheese:
    • Arrange the thinly sliced potatoes in an even layer over the beef.
    • Sprinkle with additional salt and pepper to taste.
    • Pour beef broth (or water) around the edges of the dish to help the potatoes soften while baking.
    • Top with shredded cheddar and Parmesan cheese.
  3. Bake the Casserole:
    • Cover with foil and bake for 30 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, until the potatoes are tender and the cheese is bubbly and golden.
  4. Serve & Enjoy:
    • Let the casserole rest for a few minutes before serving.
    • Garnish with fresh parsley if desired.

Notes

  • For a richer flavor, add Worcestershire sauce or hot sauce to the beef mixture.
  • Yukon Gold or Russet potatoes work best for their texture and ability to hold up during baking.
  • Swap ground beef for ground turkey or sausage for a variation.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • To freeze, wrap tightly and store for up to 3 months; thaw overnight before reheating.
