Ingredients

 

  • Dry Mixture:
    • 150g all-purpose flour
    • 1½ tsp baking powder
    • ¼ tsp salt
  • Hot Milk Mixture:
    • 60g unsalted butter
    • 120ml milk
    • 2 tbsp oil
    • 1½ tsp vanilla extract
  • Cake Batter:
    • 3 large eggs (room temperature)
    • 150g granulated sugar
  • Whipped Cream:
    • 240ml whipping cream
    • 3 tbsp powdered sugar
    • 1 tsp vanilla extract
  • Chocolate Whipped Cream:
    • 2 tbsp reserved whipped cream
    • ½ tsp cocoa powder or brown gel food coloring
  • Filling & Decoration:
    • 23 tbsp strawberry jam
    • 5 fresh strawberries (halved)
    • 20g dark chocolate (melted)

Instructions

 

  • Preheat and Prep:
    Preheat the oven to 350°F (175°C) and line two 6-inch round cake pans with parchment paper.
  • Mix Dry Ingredients:
    Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  • Prepare Hot Milk Mixture:
    Heat butter, milk, oil, and vanilla extract in a small saucepan over low heat until butter melts. Keep warm.
  • Make Cake Batter:
    • Beat eggs and sugar with an electric mixer for about 6 minutes until pale and tripled in volume.
    • Gradually fold in the dry mixture, followed by the warm milk mixture, until smooth.
  • Bake Layers:
    Divide batter evenly between pans and bake for 35–40 minutes. Let cool completely before removing from pans.
  • Whip Cream for Frosting:
    Beat whipping cream, powdered sugar, and vanilla until firm peaks form. Reserve 2 tbsp for chocolate whipped cream.
  • Prepare Chocolate Whipped Cream:
    Mix reserved whipped cream with cocoa powder or gel food coloring to create the legs.
  • Assemble Cake:
    • Place one cake layer on a serving plate.
    • Pipe a whipped cream border, spread strawberry jam in the center, and top with the second layer.
  • Decorate:
    • Add whipped cream dollops and halved strawberries.
    • Pipe legs with chocolate whipped cream and use melted dark chocolate for eyes and a smile.
