Ingredients

- 4 packages (8 oz each) cream cheese, softened
- 1 ¼ cups (250 g) granulated sugar
- ½ cup (115 g) sour cream
- 2 teaspoons vanilla extract
- 5 large eggs, room temperature
- ½ cup rainbow jimmies (sprinkles)
- Topping:
- 6–8 oz whipped cream
Instructions
- Preheat Oven: Set your oven to 350°F (175°C).
- Make the Crust: Mix graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom and sides of a 9-inch springform pan. Wrap the pan with heavy-duty foil to prevent water from seeping in.
- Prepare the Filling: Beat softened cream cheese until smooth, then add sugar and mix well. Blend in sour cream, vanilla extract, and eggs one by one. Fold in sprinkles gently.
- Assemble and Bake: Pour the cheesecake filling into the crust. Place the springform pan in a larger roasting pan. Add hot water around the springform pan and bake for 60-70 minutes, until the edges are set but the center jiggles slightly.
- Cool and Decorate: Let the cheesecake cool for an hour on a wire rack, then refrigerate for at least 4 hours (overnight is best). Top with whipped cream and more sprinkles before serving.
