Description

This indulgent birthday cheesecake is rich, creamy, and topped with colorful sprinkles for a festive touch. Whether you’re celebrating a birthday or any special occasion, this dessert will surely make the day even sweeter!

Ingredients

  • Crust:
    • 1 ½ cups (126 g) graham cracker crumbs
    • 2 tablespoons granulated sugar
    • ⅓ cup unsalted butter, melted
  • Filling:
    • 4 packages (8 oz each) cream cheese, softened
    • 1 ¼ cups (250 g) granulated sugar
    • ½ cup (115 g) sour cream
    • 2 teaspoons vanilla extract
    • 5 large eggs, room temperature
    • ½ cup rainbow jimmies (sprinkles)
  • Topping:
    • 68 oz whipped cream

Instructions

  • Preheat Oven: Set your oven to 350°F (175°C).
  • Make the Crust: Mix graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom and sides of a 9-inch springform pan. Wrap the pan with heavy-duty foil to prevent water from seeping in.
  • Prepare the Filling: Beat softened cream cheese until smooth, then add sugar and mix well. Blend in sour cream, vanilla extract, and eggs one by one. Fold in sprinkles gently.
  • Assemble and Bake: Pour the cheesecake filling into the crust. Place the springform pan in a larger roasting pan. Add hot water around the springform pan and bake for 60-70 minutes, until the edges are set but the center jiggles slightly.
  • Cool and Decorate: Let the cheesecake cool for an hour on a wire rack, then refrigerate for at least 4 hours (overnight is best). Top with whipped cream and more sprinkles before serving.

Notes

  • Crust Tip: Chill the crust in the freezer for 10-15 minutes before adding the filling to help it hold its shape.
  • Filling Tip: Ensure all ingredients are at room temperature for a smooth, lump-free filling.
  • Water Bath Tip: Double-wrap the springform pan with foil to prevent leaks.
