Irish Potato Pie is a comforting dish made with creamy mashed potatoes, cheddar cheese, and a flaky pie crust, perfect for any meal.
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 1 cup whole milk
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cooked and crumbled bacon (optional)
- 1 tablespoon fresh chives, chopped (for garnish)
- 1 pre-made pie crust (9-inch)
Instructions
- Preheat your oven to 375°F.
- In a large pot, add the cubed potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot.
- Add the milk, butter, salt, black pepper, garlic powder, and onion powder to the potatoes. Mash until smooth and creamy.
- Stir in the cheddar cheese and bacon, if using, until well combined.
- Roll out the pie crust and fit it into a 9-inch pie dish.
- Pour the potato mixture into the crust, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is heated through.
- Let the pie cool for about 10 minutes before slicing. Garnish with chopped chives before serving.
Notes
- For a creamier filling, consider adding an extra 1/4 cup of cream cheese to the potato mixture.
- To make it vegetarian, simply omit the bacon and add sautéed mushrooms or spinach for added flavor and texture.
