Description

Jello Meringue Cookies are light, crisp, and melt-in-your-mouth treats infused with fruity flavors and vibrant colors. These delicate cookies are perfect for holidays, baby showers, or any occasion where you want a fun and whimsical dessert. With just a few simple ingredients, you can create a batch of these airy, pastel-colored confections that will impress both kids and adults alike.

Ingredients

For the Meringue Base:

  • 4 egg whites, at room temperature
  • 1 cup granulated sugar
  • 3 tablespoons Jello powder (any flavor)
  • Dash of salt
  • 1/2 teaspoon cream of tartar

For Piping & Baking:

  • 1M piping tip
  • Disposable piping bags

Instructions

  1. Preheat Oven: Preheat your oven to 225°F (107°C) and line a baking sheet with parchment paper.
  2. Whip the Egg Whites: In a clean mixing bowl, use an electric mixer to beat the egg whites on medium speed until frothy. Add the cream of tartar and salt, and continue beating until soft peaks form.
  3. Incorporate the Flavor & Sweetness: Gradually add the sugar and Jello powder, one tablespoon at a time, while mixing on medium-high speed. Continue beating until the meringue forms stiff, glossy peaks.
  4. Pipe the Cookies: Transfer the meringue mixture into a piping bag fitted with a 1M star tip. Pipe small rosettes or swirls onto the prepared baking sheet, spacing them slightly apart.
  5. Bake the Meringues: Place the baking sheet in the oven and bake for 1 hour. Once the time is up, turn off the oven and leave the cookies inside with the door closed for another hour to dry completely.
  6. Cool and Store: Remove the cookies from the oven and let them cool completely before transferring them to an airtight container. Store at room temperature for up to 2 weeks.

Notes

  • Ensure that the mixing bowl and beaters are completely clean and dry before whipping the egg whites.
  • Avoid making these on humid days, as meringues absorb moisture and can become sticky.
  • If you want multi-colored meringues, divide the mixture and use different Jello flavors before piping.
  • To check if the cookies are done, they should be dry and lift off the parchment paper easily.
