Ingredients

  • 1 cup boiling water
  • 1 cup cold water
  • 1 package (3 oz) flavored gelatin (any color)
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fruit (like strawberries or bananas), finely chopped
  • 1/2 cup whipped cream (optional for serving)

Instructions

  1. In a mixing bowl, dissolve the flavored gelatin in 1 cup of boiling water, stirring until completely dissolved. Add 1 cup of cold water and mix well. Pour the mixture into a 9×13-inch baking dish. Refrigerate for about 2 hours, or until fully set.
  2. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Once the gelatin is set, carefully flip it onto a clean cutting board or countertop. Cut the gelatin into rectangles, about 2 inches by 3 inches.
  4. Spread a thin layer of the cream cheese mixture over each gelatin rectangle, then sprinkle a few pieces of chopped fruit on top.
  5. Roll each rectangle tightly from one end to the other, creating a roll-up.
  6. Place the roll-ups seam-side down on a serving platter. If desired, serve with whipped cream on the side for dipping.
