Jello Roll-Ups are a fun and colorful treat made with flavored gelatin and a creamy filling, perfect for parties or as a sweet snack.
Ingredients
- 1 cup boiling water
- 1 cup cold water
- 1 package (3 oz) flavored gelatin (any color)
- 1 package (8 oz) cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup fruit (like strawberries or bananas), finely chopped
- 1/2 cup whipped cream (optional for serving)
Instructions
- In a mixing bowl, dissolve the flavored gelatin in 1 cup of boiling water, stirring until completely dissolved. Add 1 cup of cold water and mix well. Pour the mixture into a 9×13-inch baking dish. Refrigerate for about 2 hours, or until fully set.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the gelatin is set, carefully flip it onto a clean cutting board or countertop. Cut the gelatin into rectangles, about 2 inches by 3 inches.
- Spread a thin layer of the cream cheese mixture over each gelatin rectangle, then sprinkle a few pieces of chopped fruit on top.
- Roll each rectangle tightly from one end to the other, creating a roll-up.
- Place the roll-ups seam-side down on a serving platter. If desired, serve with whipped cream on the side for dipping.
