Ingredients
- 2 pounds boneless, skinless chicken thighs
- 3 tablespoons lemongrass, finely chopped (white part only)
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 3 tablespoons fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon black pepper
- 1 teaspoon chili flakes (optional)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large bowl, combine the lemongrass, garlic, ginger, fish sauce, soy sauce, brown sugar, vegetable oil, black pepper, and chili flakes (if using). Mix well to create a marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill or a grill pan over medium-high heat.
- Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade.
- Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
- Serve the chicken garnished with fresh cilantro and lime wedges on the side.
