Description
A flavorful and juicy Lemon Herb Grilled Chicken recipe that is perfect for summer grilling.
Ingredients
- 2 pounds boneless, skinless chicken breasts
 - 1/4 cup olive oil
 - 1/4 cup fresh lemon juice (about 2 lemons)
 - 2 teaspoons lemon zest
 - 4 cloves garlic, minced
 - 2 teaspoons dried oregano
 - 1 teaspoon dried thyme
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/4 teaspoon red pepper flakes (optional)
 - Fresh parsley, chopped (for garnish)

Instructions
- In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes until well combined.
 - Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
 - Preheat the grill to medium-high heat.
 - Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
 - Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F and the chicken is cooked through.
 - Remove the chicken from the grill and let it rest for 5 minutes before slicing.
 - Garnish with fresh parsley before serving.

Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
 - Serve with grilled vegetables or a fresh salad for a complete meal.
