Description

Enjoy a festive and guilt-free treat with these Lightened Easter Egg Cake Balls! Made with Greek yogurt and egg whites, they offer a healthier spin on the classic cake pop while keeping all the fun and flavor. Coated in colorful candy melts and decorated with festive sprinkles, these bite-sized delights are perfect for Easter gatherings, classroom parties, or simply satisfying your sweet tooth without overindulgence.

Ingredients

  • 1 package (15.5 oz) yellow cake mix (or any flavor of choice)
  • 1 teaspoon vanilla extract
  • 5.5 oz plain fat-free Greek yogurt
  • 2 large egg whites
  • ¾ cup plus 2 tablespoons water
  • Approximately 20 oz colored candy melts (such as Wilton brand)
  • Sprinkles for decoration
  • Baking spray

Instructions

Prepare the Cake:

  1. Preheat the oven according to the cake mix package instructions.
  2. In a large bowl, mix cake mix, Greek yogurt, egg whites, water, and vanilla extract until smooth.
  3. Lightly spray a baking pan with baking spray and pour in the batter, spreading evenly.
  4. Bake according to package instructions or until a toothpick inserted in the center comes out clean.
  5. Let the cake cool completely before proceeding.

Form the Cake Balls:

  1. Crumble the cooled cake into fine crumbs using your hands or a food processor.
  2. Take small portions and roll them into egg-shaped balls, about 1 inch in size.
  3. Place them on a parchment-lined baking sheet and freeze for 30 minutes to firm up.

Coat and Decorate:

  1. Melt the colored candy melts in a microwave-safe bowl according to package instructions.
  2. Using a fork or skewer, dip each cake ball into the melted coating, ensuring it is fully covered.
  3. Gently tap off excess coating and place on parchment paper.
  4. While the coating is still wet, decorate with sprinkles as desired.
  5. Allow to set at room temperature or briefly refrigerate for faster setting.

Notes

  • Storage: Store in an airtight container in the fridge for up to a week, or freeze for up to three months.
  • Customization: Swap in different cake flavors like chocolate, lemon, or carrot for variety.
  • Dipping Tip: Work quickly when coating as candy melts harden fast.
