- 2 cups mashed potatoes (prepared and cooled)
- ½ cup cheddar cheese, shredded
- ¼ cup cooked bacon, crumbled
- ¼ cup green onions, finely chopped
- ¼ cup cream cheese, softened
- Salt and pepper, to taste
For Breading:
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Panko preferred)
For Frying:
- Oil (canola or vegetable), as needed
Instructions
1. Prepare the Filling
- Combine mashed potatoes, shredded cheddar cheese, crumbled bacon, green onions, cream cheese, salt, and pepper in a large bowl.
- Mix until all ingredients are well combined.
2. Shape the Potato Bites
- Scoop 2 tablespoons of the mixture and roll into a ball using your hands.
- Repeat until all the mixture is used.
3. Set Up the Breading Station
- Prepare three bowls:
- Bowl 1: All-purpose flour
- Bowl 2: Beaten eggs
- Bowl 3: Panko breadcrumbs
- Roll each potato ball in flour, dip into the beaten eggs, and coat with breadcrumbs.
4. Heat the Oil
- Heat about 2 inches of oil in a deep skillet or pot over medium-high heat.
- Test the oil by dropping a breadcrumb into it; if it sizzles, the oil is ready.
5. Fry the Potato Bites
- Carefully place a few potato bites into the hot oil without overcrowding the pan.
- Fry for 3–4 minutes, turning occasionally, until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
6. Garnish and Serve
- Garnish with additional chopped green onions if desired.
- Serve warm with sour cream, ranch dressing, or your favorite dipping sauce.
