Description

Loaded Taco Potatoes are a delicious and easy baked potato dinner filled with seasoned ground beef, black beans, corn, and topped with cheese and fresh toppings.


Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 medium tomato, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes under running water, then pierce them several times with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  2. While the potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  4. Stir in the taco seasoning, black beans, and corn. Add a splash of water if needed to help combine. Cook for another 3-4 minutes until heated through. Season with salt and pepper to taste.
  5. Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
  6. Spoon the taco beef mixture into each potato, then top with shredded cheddar cheese. Return the loaded potatoes to the oven for an additional 5-10 minutes, or until the cheese is melted.
  7. Remove from the oven and top each potato with sour cream, diced tomatoes, avocado, and chopped cilantro. Serve immediately.

Notes

  • For a healthier option, substitute ground turkey or chicken for the ground beef.
  • Add jalapeños or hot sauce for an extra kick of spice.
