Description

These Luck of the Irish Rice Krispie Treats bring fun, color, and nostalgia to any celebration! Featuring a vibrant green hue, a smooth white chocolate topping, and festive rainbow sprinkles, they’re an easy, no-bake treat perfect for St. Patrick’s Day.

Ingredients

  • 8 cups rice cereal
  • 4 tablespoons butter
  • 4 cups marshmallows
  • Green food dye
  • 1 bag of white chocolate chips
  • Rainbow sprinkles

Instructions

  1. Prepare the Base: Line a 9×13-inch dish with wax paper and set aside.
  2. Melt the Marshmallows: In a medium saucepan, melt butter over medium heat, then stir in marshmallows until fully melted.
  3. Add the Color: Remove from heat and mix in green food coloring until you achieve the desired shade.
  4. Combine with Cereal: Pour the marshmallow mixture over the rice cereal and stir until fully coated.
  5. Shape and Set: Transfer to the prepared dish, pressing the mixture down evenly. Allow to cool and harden.
  6. Chocolate Coating: Melt white chocolate chips in the microwave, stirring in 30-second intervals until smooth.
  7. Decorate: Dip or drizzle the top of each square with melted white chocolate and sprinkle with rainbow sprinkles before the chocolate sets.
  8. Enjoy: Let the treats harden completely before serving or storing in an airtight container.

Notes

  • Use gel food coloring for the most vibrant green without altering the texture.
  • To keep treats soft and chewy, avoid overpacking the mixture into the dish.
  • Store in an airtight container at room temperature for up to 5 days.
  • For a dairy-free version, substitute butter and white chocolate with plant-based alternatives.
