Description

These Lucky Charms Chocolate Cookies are a nostalgic and indulgent treat, blending rich chocolate flavor with the whimsical crunch of Lucky Charms marshmallows. With a chewy cookie base, creamy white chocolate chunks, and colorful marshmallow bits, these cookies are perfect for St. Patrick’s Day, birthdays, or any fun-filled occasion!

Ingredients

  • For the Chocolate Cookie Base:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1/2 cup brown sugar, packed
    • 2 large eggs
    • 2 tsp vanilla extract
    • 2 cups all-purpose flour
    • 3/4 cup unsweetened cocoa powder
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp espresso powder (optional, enhances chocolate flavor)
  • For the Mix-Ins:
    • 1 cup white chocolate chunks
    • 1 1/2 cups Lucky Charms marshmallows (reserve some for topping)
    • Flaky sea salt for garnish (optional)

Instructions

  1. Cream the Butter and Sugar: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  2. Incorporate Wet Ingredients: Add eggs and vanilla extract, mixing until well combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  4. Combine the Dough: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in Mix-Ins: Gently stir in white chocolate chunks and Lucky Charms marshmallows, reserving some marshmallows for topping.
  6. Chill the Dough: For thicker cookies, refrigerate the dough for 30 minutes.
  7. Scoop and Bake: Preheat the oven to 350°F. Line baking sheets with parchment paper. Scoop dough balls onto the sheets, slightly flatten, and bake for 9-11 minutes.
  8. Garnish and Cool: While still warm, press reserved marshmallows into the tops and sprinkle with flaky salt if desired. Let cookies cool before serving.
