Description

A delicious and creamy mango cheesecake that brings a tropical twist to your dessert table.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mango puree (fresh or canned)
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Fresh mango slices for garnish

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of granulated sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  5. Stir in the mango puree and lemon juice until fully incorporated. Pour the cream cheese mixture over the cooled crust in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to set completely.
  8. Before serving, whip the heavy cream with powdered sugar until soft peaks form. Spread or pipe the whipped cream on top of the cheesecake and garnish with fresh mango slices.

Notes

  • For a tropical twist, try adding shredded coconut to the crust or topping the cheesecake with toasted coconut flakes.
  • If you prefer a lighter version, substitute half of the cream cheese with Greek yogurt for added protein and a tangy flavor.
