Description
A refreshing Mango Cucumber Salad that combines tropical flavors with a zesty dressing.
Ingredients
- 2 ripe mangoes, peeled and cubed
- 1 large cucumber, chopped
- 1/4 red onion, finely sliced
- 1/4 cup fresh cilantro, roughly chopped
- 1 jalapeño, finely minced (optional)
- Juice of 2 limes
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground pepper to taste
Instructions
- Prepare a large bowl and add the cubed mangoes, chopped cucumber, sliced red onion, cilantro, and minced jalapeño if desired.
- In a separate small bowl, combine the lime juice, olive oil, salt, and pepper, whisking until well blended.
- Drizzle the dressing over the fruit and vegetable mixture and gently fold everything together to ensure even coating.
- Allow the salad to rest for approximately 15 minutes to help the flavors develop.
- Serve chilled or at room temperature.
Notes
- For an extra crunch, toss in some diced bell peppers or a handful of toasted seeds.
- Swap lime juice for lemon juice for a different twist, or sprinkle in a dash of chili powder for an added kick.
