Ingredients
- 1 pre-made 9-inch pie crust (store-bought or homemade)
- 2 ripe mangoes, peeled and diced
- 3/4 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lime juice (about 2 limes)
- 1/4 cup unsalted butter, melted
- 1 teaspoon lime zest
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Place the diced mangoes in a blender or food processor and puree until smooth. You should have about 1 cup of mango puree.
- In a medium mixing bowl, whisk together the sugar, eggs, lime juice, melted butter, lime zest, and salt until well combined.
- Stir in the mango puree until fully incorporated.
- Pour the mango mixture into the pre-made pie crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the filling is set and slightly jiggly in the center.
- Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to fully set.
- Serve chilled, garnished with fresh mango slices or whipped cream if desired.
Notes
- For a tropical twist, add shredded coconut to the crust or top the tart with toasted coconut flakes.
- Substitute the mango with other fruits like passion fruit or peach for a different flavor profile.
