  • 2 ripe mangoes, peeled and diced
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the diced mangoes in a blender or food processor and puree until smooth. You should have about 1 cup of mango puree.
  3. In a medium mixing bowl, whisk together the sugar, eggs, lime juice, melted butter, lime zest, and salt until well combined.
  4. Stir in the mango puree until fully incorporated.
  5. Pour the mango mixture into the pre-made pie crust, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the filling is set and slightly jiggly in the center.
  7. Remove from the oven and let cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to fully set.
