Description
Mango Tres Leches is a delicious and moist cake soaked in three types of milk, topped with whipped cream and fresh mango slices.
Ingredients
- 2 cups whole milk
- 1 cup sweetened condensed milk
- 1 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 5 large eggs
- 1 cup granulated sugar
- 1 cup fresh mango puree (about 2 ripe mangoes)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Fresh mango slices for garnish
- Mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- In a medium bowl, whisk together the whole milk, sweetened condensed milk, evaporated milk, and 1 teaspoon of vanilla extract. Set aside.
- In another bowl, combine the flour, baking powder, and salt.
- In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy, about 5 minutes.
- Gradually add the dry ingredients to the egg mixture, mixing until just combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Once the cake is baked, remove it from the oven and let it cool for about 10 minutes. Poke holes all over the top of the cake using a fork or skewer.
- Slowly pour the milk mixture over the cake, ensuring it seeps into the holes. Allow the cake to absorb the milk for at least 1 hour at room temperature, or refrigerate for 4 hours or overnight for best results.
- In a mixing bowl, whip the heavy cream, powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
- Spread the whipped cream over the top of the soaked cake.
- Top with fresh mango slices and garnish with mint leaves before serving.
Notes
- For a tropical twist, try adding shredded coconut to the whipped cream or sprinkle it on top.
- You can also substitute the mango puree with other fruits like strawberries or peaches for a different flavor profile.
