Description

Mango Tres Leches is a delicious and moist cake soaked in three types of milk, topped with whipped cream and fresh mango slices.


Ingredients

  • 2 cups whole milk
  • 1 cup sweetened condensed milk
  • 1 cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 5 large eggs
  • 1 cup granulated sugar
  • 1 cup fresh mango puree (about 2 ripe mangoes)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh mango slices for garnish
  • Mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a medium bowl, whisk together the whole milk, sweetened condensed milk, evaporated milk, and 1 teaspoon of vanilla extract. Set aside.
  3. In another bowl, combine the flour, baking powder, and salt.
  4. In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy, about 5 minutes.
  5. Gradually add the dry ingredients to the egg mixture, mixing until just combined.
  6. Pour the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once the cake is baked, remove it from the oven and let it cool for about 10 minutes. Poke holes all over the top of the cake using a fork or skewer.
  8. Slowly pour the milk mixture over the cake, ensuring it seeps into the holes. Allow the cake to absorb the milk for at least 1 hour at room temperature, or refrigerate for 4 hours or overnight for best results.
  9. In a mixing bowl, whip the heavy cream, powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
  10. Spread the whipped cream over the top of the soaked cake.
  11. Top with fresh mango slices and garnish with mint leaves before serving.

Notes

  • For a tropical twist, try adding shredded coconut to the whipped cream or sprinkle it on top.
